A super quick and easy side dish, Seoul Kimchi adds a spicy and bold spin to oven-roasted brussels prouts.
1 lb brussels sprouts
1/4 pound bacon
1 small shallot
1 cup Seoul Kimchi and juices (any flavor)Preheat oven to 425 degrees.
Prep Ingredients: Finely chop shallot and bacon. Trim brussels sprouts and cut large ones in half.
Step 2: Place bacon in an oven-safe pan and cook for 5 minutes.
Step 3: Remove bacon, leaving any bacon grease and add brussels sprout and shallots. While the brussels sprouts cook, place kimchi in a blender or food processor until its a salsa-like consistency.
Step 4: Remove when bright green with brown edges (about 10-12 min).
Step 5: Mix kimchi with brussels sprouts, and serve!
