Avocado & Kimchi Egg Salad 

Serves 1


Mix the following items:

1/2 ripe avocado

1/4 cup chopped Seoul Kimchi (any variety)

2 hard-boiled eggs, roughly chopped

1 Tbs Japanese Mayo (such as Kewpie)


Top with sesame seeds (optional)


serve over a bed of lettuce, on toast or with crackers
